Many countries have similar dishes: Berliners in Germany, kichli in Austria, galani in Italy, donuts in the USA, kourros in Spain and so on. The differences are only in the shape of the donuts and a little in the frying method.

Donut dough is prepared both in the traditional way from wheat flour and from other products: potatoes, chestnut pulp, pumpkin, cottage cheese, carrots, rice, meat, buckwheat or rice flour.

Donuts come with or without filling. All kinds of products are used for the filling, here we can fantasize as best we can. The surface of the finished products is most often sprinkled with powdered sugar, coconut flakes or nuts. You can also coat the donuts with chocolate or different types of glaze.

Sweet Potato Donuts

Ingredients:

  • potatoes – 500 g;
  • milk – 300 ml;
  • flour – 1 kg;
  • vegetable oil – 120 g;
  • dry activated yeast – 15 g;
  • raw chicken eggs – 2 pcs.;
  • sugar – 100 g;
  • salt - teaspoon;
  • hot water – 2-3 tablespoons;
  • powdered sugar – 150 g.

Preparation

Peel the potatoes, rinse and boil in lightly salted water. We drain some of the potato broth and reserve approximately 100-150 g. Cool the broth to room temperature and dissolve the yeast in it.

Mash the potatoes until pureed, pour in heated milk, butter, add as much salt and sugar as needed, and also pour in eggs and dissolved yeast. Mix everything and gradually add flour sifted twice through a sieve. When the dough becomes soft and elastic, set it aside in a warm place for one hour. After an hour, knead the dough and place it there for another half hour.

Sprinkle the table with flour and roll out the dough. Cut out circles with a glass. You can make holes in the middle using utensils with a smaller diameter. You will get donuts in the form of rings.

Heat a large amount of oil in a deep frying pan (so that the dough floats in the oil) and fry each donut in it on both sides. Place on a sieve or paper towels to allow excess fat to drain. Sprinkle the top of the donuts with powdered sugar or brush with a sweet syrup made from powder and hot water.

Therefore, donuts according to the same recipe can be made with the addition of filling, for example, prunes. It is pre-steamed and cut into small pieces.

Ingredients:

  • mashed potatoes – 500 g;
  • flour – 750 g;

  • kefir – 200 g;
  • soda - half a teaspoon;
  • salt, sugar, spices to taste.

Preparation

We extinguish the soda, beat in the eggs, add cheese, salt, sugar and spices. Mix. Gradually add sifted flour and knead into a thick dough. Roll out the dough to a layer approximately 1 cm thick. Squeeze out round donuts with a glass and fry in heated vegetable oil on both sides. Serve with sour cream and herbs.

  • potatoes - 400 grams;
  • milk - 150 grams.

Incredibly delicious potato donuts. Step by step recipe

  1. To make incredibly tasty donuts, we need potato broth and mashed potatoes.
  2. Wash the potatoes (according to the recipe) well under running water and peel them.
  3. Cut the peeled potatoes into small pieces, place them in a small saucepan, add water and place on the stove. Cook the potatoes until fully cooked.
  4. Tip: to make the potatoes cook faster, you can pour hot water (boiling water) over them.
  5. When the potatoes are cooked, pour the broth from them into a separate container, and mash the potatoes well into a puree.
  6. Add dry yeast to potato broth (150 milliliters), mix well, cover with a napkin and send to a warm place for 10-15 minutes.
  7. Pour warm milk into the mashed potatoes and mash well (for this I use a potato masher to make mashed potatoes) until smooth, so that there are absolutely no lumps.
  8. Then pour 60 milliliters of sunflower oil into the potato mass and stir the oil into the potato mass in a circular motion.
  9. Break one chicken egg into a container with potato mixture, add salt to taste and mix until smooth.
  10. When the yeast is well activated, add it to the potato mixture and mix everything in a circular motion.
  11. For incredibly tasty potato donuts, we first sift the wheat flour (according to the recipe).
  12. Add the sifted flour to the potato mixture in small portions and, after each addition, mix well with a wooden spatula.
  13. Place the already thick dough on the table and knead it well (add flour periodically, but don’t add a lot of flour). The dough for potato donuts should be soft and airy.
  14. Round the finished dough and place it in a deep proofing container.
  15. Cover the container with the dough with a kitchen towel and leave in a warm place for 50-60 minutes (during this time the dough should increase in volume, become soft and airy).
  16. Sprinkle the table with a little flour, lay out the dough and knead it gently (you should not use a lot of flour while kneading the dough).
  17. Then put the dough back into the bowl, add 2-3 tablespoons of sunflower oil and knead it with your hands again, but in the bowl (this way the donut dough will stick to your hands less). The dough for making incredibly delicious potato donuts is ready.
  18. Pour sunflower oil into a saucepan and place on the stove.
  19. Take a tablespoon, dip it in water, then with the same spoon take a little potato dough and drop it into well-heated oil.

  21. Fry the donuts over low heat on all sides until golden brown (one serving of donuts takes approximately 3-5 minutes to fry).

Today I will share a recipe for salty potato donuts with yeast dough, which can be served as a snack with alcoholic drinks, or as a separate dish with tea or coffee. Despite the fact that they are prepared using yeast, the recipe is very affordable, in my opinion. And if you are a fan of potato pancakes, then you will definitely like this dish.
This recipe makes a lot of donuts, about 4 servings.
So, let's go. Let's prepare a yeast base for future donuts. Warm the milk a little until warm; it should not be hot, otherwise the yeast will die prematurely. Milk can be replaced with water. Pour yeast into milk. I take dry ones, but you can also use pressed ones, then you need to take 3 times more of them, i.e. 15 grams.

Add about half of the total amount of flour to them.


Mix the ingredients thoroughly and leave the yeast mixture to rise for 40-60 minutes in a warm place, covered with a towel or cling film so that it does not become covered with a dry crust.


When the time comes to an end (in 30-40 minutes), you can start working on the potatoes. Peel 0.5 kg of potatoes. In pieces this is approximately 3 large potatoes, or like mine - 1 medium and 1 giant). The potatoes need to be chopped in any available way, just as you do it for potato pancakes: on a fine, medium grater, or, like me, with a blender. To remove excess liquid, place the crushed potato mixture on a sieve and let the moisture drain.


During this time, the yeast formed a foamy cap on the dough. Place the potatoes in this bowl


add garlic cloves pressed through a press, softened butter, break the egg, and salt and pepper to taste. You can also add spices to your taste. I didn’t add them, because, in my opinion, there is more than enough garlic here, it will clog everything.


Mix all the ingredients. It turns out to be a mass - like potato pancakes.


But since we need a thicker mixture, we add the remaining flour, i.e. half of the amount indicated in the description.


We will cook in deep fat, so pour vegetable oil into a saucepan and heat it. We achieve a temperature of at least 130 degrees. When we add the bread crumbs into the oil, the oil should begin to sizzle.
Breme a tablespoon with a small heap of dough and place it in a saucepan. We fry as many donuts at a time as the size of the dish allows. I could fit 3-4 of them.


Visually, the mass will seem too liquid for donuts, but as soon as the dough gets into the hot oil, it immediately sets and the donut swells.


Fry them for approximately 3 minutes on one side, and 1-1.5 minutes on the other.


Place the finished donuts on paper towels or napkins to absorb the fat. They absorb oil very, very well, so after removing them from the pan, I even slightly flattened them over the dish with tongs so that the maximum amount of oil drained from them, and then blotted them directly with napkins.
The donuts come out a little oddly shaped, depending on how you like them.

Potato donuts with cranberry sauce

Potato donuts go great with cranberry sauce. To prepare the dish you will need:

  • granulated sugar (160 g);
  • yeast (20 g);
  • potatoes (500 g);
  • milk (1/2 cup);
  • egg.

For the sauce you will need:

  • cranberries (310 g);
  • granulated sugar (160 g);
  • starch (tsp).

First you need to prepare the dough. Stir a dose of yeast in warm (not hot!) milk. Add a spoonful of flour and granulated sugar. Mix well and place in a warm place, covered with a cloth. Wait an hour.

Boil the potatoes, cool slightly and pass through a meat grinder. Pour oil (2 tbsp) into the mixture and add salt to taste. Additionally, you need to mix flour and egg into the potato mixture to make a fairly stiff dough. Then pour the dough into it and mix again. Place the dough in a warm place for two hours.

When the time is up, roll out the resulting dough into a layer of centimeter thickness. Using a glass, cut out circles and deep-fry them until golden brown.

To prepare the sauce you need:

  • Grind the cranberries using a blender and additionally rub through a sieve;
  • add granulated sugar to the puree and simmer on low heat for 10 minutes;
  • in a separate container, dilute the starch (in two tablespoons of cold water) and add to the cranberry puree;
  • Bring the sauce to a boil and turn off the heat.

Serve the donuts hot, topped with prepared cranberry sauce.
